Ingredients:
- 1 stick butter (½ cup)
- 1 cup milk
- ¾ cup all-purpose flour
- 4 eggs
- ½–1 tablespoon sugar (optional)
- Sugar for sprinkling (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- In a saucepan, melt butter over medium heat. Add milk and bring to a boil.
- Quickly add the flour all at once, stirring vigorously until the mixture forms a smooth dough and pulls away from the sides of the pan.
- Remove from heat and let cool for 5 minutes.
- Beat in eggs one at a time, mixing well after each addition. The batter will become smooth and glossy.
- Stir in sugar if using.
- Spoon batter evenly into prepared muffin cups, filling each about ¾ full.
- Sprinkle tops with sugar if desired.
- Bake for 30–35 minutes or until golden and puffed.
- Let cool slightly before serving. Best enjoyed fresh and warm!
