Fragrant Coconut Chickpea

Ingredients:

  • 2 cups (400g) cooked chickpeas
  • 1 (14 oz/400 ml) can coconut milk
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp (15ml) olive oil
  • 1 tsp (5g) ground cumin
  • 1 tsp (5g) paprika
  • 1 cup (240ml) vegetable broth
  • 1 cup (150g) cherry tomatoes, halved

Directions:

  1. Start by heating the olive oil in a pot over medium heat. Add the diced onion and minced garlic, sautéing until they’re fragrant and the onion becomes translucent.
  2. Next, sprinkle in the ground cumin and paprika. Let them mingle with the onion and garlic for about a minute to release their aromatic essence.
  3. Stir in the cooked chickpeas, coconut milk, vegetable broth, and the halved cherry tomatoes. Bring everything to a gentle simmer and let it cook for about 15 minutes, allowing all those wonderful flavors to blend together.
