These Fruity Pebbles Cheesecake Tacos are a fun and delicious twist on traditional cheesecake! Perfect for Easter Day or any special occasion, these crunchy taco shells filled with creamy cheesecake filling and topped with colorful Fruity Pebbles will be a hit with both kids and adults!
Ingredients:
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (adjust to taste)
- 2 tablespoons sour cream
- ½ teaspoon vanilla extract
- ½ cup crushed Fruity Pebbles cereal
Instructions:
- In a medium-sized bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
- Add the sour cream and vanilla extract, and continue to mix until well combined.
- Fold in the crushed Fruity Pebbles cereal, being careful not to crush them too much to keep some texture.
- Place the cheesecake filling in the fridge to chill for at least 30 minutes to firm up before filling the taco shells.
- While the filling chills, prepare the taco shells. You can use pre-made waffle cones, breaking them into taco shapes, or make your own taco shells from crispy rice cereal and melted butter (see tips below).
- Once the cheesecake filling is chilled, spoon it into the taco shells, filling each one generously.
- Top with additional crushed Fruity Pebbles for extra crunch and color.
- Serve immediately, or refrigerate until ready to serve for a cool, refreshing treat!
Tips for Perfect Fruity Pebbles Cheesecake Tacos:
- If you want a crunchy homemade taco shell, melt butter and mix with crushed rice cereal. Mold the mixture into taco shapes and bake until crispy!
- You can adjust the sweetness of the cheesecake filling by adding more or less sugar to taste.
- For an added touch, drizzle some melted white chocolate or caramel sauce on top before serving!
